Simple Baked Butternut Squash

Here’s another recipe that was made on New Year’s Eve and was easy to make, yet still tasty.


  • 1 butternut squash, cubed  (I used some frozen squash left over from my garden this summer)
  • olive oil
  • salt
  • pepper
  • fresh herbs (garlic, basil, oregano, parsley, etc.)



Preheat the oven to 400º.

Place the cubed butternut squash in a 9×13 pan.  Add the olive oil, salt and pepper.  Then add whatever herbs you like best.

Cook for 30-45 minutes till the butternut squash has browned a little on top.  Enjoy!IMG_1647
